This recipe calls for much less included sugar than common quick bread recipes. Fruit, spices and vanilla make this bread flavorful.

Ingredients

  1. 1/two cup sifted all-reason flour
  2. 1 cup complete-wheat flour
  3. two teaspoons baking powder
  4. 1/two teaspoon baking soda
  5. 1/two teaspoon ground cinnamon
  6. 1/four teaspoon ground ginger
  7. 1/three cup canola oil
  8. 1/four cup, plus two tablespoons, firmly packed brown sugar
  9. 1/three cup skim milk
  10. two tablespoons unsweetened orange juice
  11. two egg whites, or egg substitute equal to 1 egg, overwhelmed
  12. 1 teaspoon vanilla extract
  13. 1 teaspoon grated orange rind
  14. 1 1/two cups shredded carrots
  15. two tablespoons golden raisins
  16. 1 tablespoon finely chopped walnuts

Directions

Heat oven to 375 F. Spray two 1/two-by-four 1/two-by-8 1/two-inch loaf pan with cooking spray.

In a smaller bowl, incorporate 1st six dry substances. Set aside.
